I just harvested some of the celery we’ve grown in our little urban container garden. We are huge celery eaters, I usually throw some in my lunch box, to snack on raw a few times a week. H also snacks on it, if it is cut up and ready for him. What’s great about H is that he will eat the leafy parts also without any alteration to the veggie. I am not a huge fan of celery leaves, but will eat them chopped up in a salad.
I find celery helps a lot with any type of inflammation I might be dealing with. Natural News wrote about the benefits of celery in 2008, linked here. I realize that any inflammation is bad, and I am trying to gain control of it, I am susceptible as it runs in my family. Pretty much all the woman in my family run around with swollen ankles. So I dedicate this salad to them!
Anti Inflammatory Celery and Avocado Salad
10 stalks of celery washed
1 medium sized carrot or several small carrots
1/8 cup lime juice
1 tablespoon Olive Oil
Salt to taste
- Chop the celery, carrots and tomato into 1/4 inch pieces and toss together in a bowl
- Cut the avocado into small pieces and mix together with the above vegetables
- Dress with the lime and olive oil
- Mix everything together well
- Add salt to taste
